Tasting Notes
We love rosé that’s not shy on color; ours has a medium salmon pink hue to capture your eye, and bursting flavors to match. Once again, we modeled our pink after a classic French Loire Valley dry rosé with our focus on Cabernet Franc. This variety yields a balance of fresh fruit flavors, botanical dimension, refreshing acidity and a clean, crisp, minerally finish. You’ll taste bright red raspberry, pomegranate, cranberry, peach, citrus blossom, tea, and a zing of white pepper, thanks to the spicyness of the Syrah.

The balance of fruit and acidity in this wine lends itself to a wide variety of food pairings – picture a plate of Mediterranean delights, your favorite patio grilled meals, or a picnic of proscuitto, fresh cheese, olives, and crusty French bread. And don’t forget the fall and winter Holidays - our rose is meant to be enjoyed with year-round foods!
Process
This year we added a little twist to our rosé, and spiced it up with some Syrah. The Cabernet Franc and Syrah were picked on the same day, a couple of weeks earlier than for red wine, specically for rosé production. Both varieties were co-fermented for the best integration: first, they were crushed and cold soaked together for 8 hours before going to press. The resulting juice was allowed to ferment with wild yeasts, at cool temperatures in stainless steel tank. Finally, it rested on a small amount of lees for a few weeks, then simply rested and bottled. The 2016 growing season on Long Island had generally favorable weather, with a mid-autumn chill that slowed vine vigor and ripening. Turns out that’s prefect for capturing grapes destined for rosé at just the right point in their maturity. It enables the winemaker to choose an optimal day to pick for the best acidity, flavor and grape sugar levels. 2016 was a prime year for rosé production for that reason.
